Arrive at dive bar. Buy her tequila and pucker shots. When it's time, tell her that you're ready and that she might want to freshen up in the bathroom before you leave. Then, explain that you don't like to seem too forward or pushy on a first date, that's why you've got a 4 hour block rented at the Quality Inn vs. going back to your place.
so that is how you lured in Omaha.

Haven't been in the dating game for a long, long time but this place was solid at one time. Probably still is. Unfortunately, I don't see that they serve Dr. Pepper by the bottle. And beware of that pesky corkage fee.

edit - If you don't know what she likes I suggest Italian. Everyone can find something to eat on an Italian menu.
I recommend Pizza Hut. Best. Italian. Restaurant. Ever.

See if she would be ok with "dinner" at noon. You can do their buffet then.

You'll have to bring your own Busch Beer. They only serve Pepsi products there.

I have several co-workers who cite that place as their favorite Italian restaurant in town.

I want something that's not a chain, but also not super nice. Not because I'm cheap, but this is kind of a casual meet up for the first date. Yes, she's calling it a date. But we're just doing lunch for now. If all goes well then I'll take her out to one of these more serious restaurants. I'm not getting laid on a lunch date, so I'm not going to pay for a super expensive meal.

Why don't you pack a picnic lunch with wine, cheese and crackers. Enjoy the nature.

Then go home alone, tuck your package between your legs and paint your nails while you cry.

strip club then, since you don't want her to get you off, at least there you can pay somebody else to instead

There's plenty of non-chain strip clubs on the east side

Bah, I didn't know there was a lunch stipulation.

Sorry, I've always specialized in bar skanks that aren't awake at lunch. Whatever Bulldog recommends for a lunch date is probably your safest bet.
